Pierre’s Bistro is a small restaurant located in the Backstreets of District 23. Run by Pierre and Jack, the bistro is acclaimed for its meat dishes. The restaurateurs hide a dark secret, though: their dishes are cooked with human meat.
They are the fifth Guests to enter the Library, and the Episode of Pierre's Bistro comprises the first reception of Urban Myth.

Story
Episode 1
Pre-Battle
Pierre is seen attempting to create a new dish, but is left frustrated by her lack of inspiration. Jack soon enters the room from a successful ingredient hunt, carrying with him several captured "ingredients". They converse about their current shortage of ingredients, as both their suppliers have stopped selling to them and their former hunting ground is under the protection of the Zwei Association, which means they must "pioneer a new supply chain". Pierre states her wish to create more experimental dishes to make up for their lack of ingredients and continuing pleasing the gourmets of their District. Jack suggests used aged ingredients instead of younger ones, but Pierre refuses to put compromise in her cuisine and tells him of her idea: the Library. Pierre has heard that the Library contains monsters, whose meat she intends to use to create an original taste. This is convenient for her as monster meat could otherwise only be obtained from the Outskirts. She asks Jack to join her in her adventure for monster meat, which he accepts.
While Pierre prepares to sign the Red Invitation she has recently received, Jack asks her what he should do with the ingredients he brought. Pierre instructs him to drug them and place them in a "kneader" to be made into meat jam. She stresses that he must put the ingredients in legs first to prolong their suffering, as a slower death will make their meat tastier.
Back in the Library, Angela comments on the presence of cannibalism in the City. Roland clarifies that it is still a widespread taboo and is practiced more by depraved members of the wealthy than average citizens of the Backstreets. He explains that the only exception is District 23's Backstreets, where cannibalism is ingrained into culture as part of their pursuit of the ultimate flavor. The pair briefly note on the different characteristics of each district's Backstreets and their overall neglect by the Wings. Angela asks Roland whether human flesh is really so delicious, which Roland doesn't know. He does note that he is even less motivated to try due to knowing the cruelty of the gourmets who cook humans alive for better flavors.
Upon entering the Library, Pierre is eager to find new inspiration from the unfamiliar environment, though Jack is more wary. Seeing Angela, Pierre can't help but compliment her as a worthy ingredient, though both she and Jack recognize that she is not human. This doesn't stop Pierre from outright asking Angela how she tastes, which she disregards as a pointless threat. Jack doesn't back down, but Pierre tells him to be polite, so he apologizes to Angela. With that, Angela allows them to enter the Library.
Post-Battle
Roland derides the Guests as a "bunch of nutcases." Angela notes their politeness and calls Roland out for his lack thereof. Annoyed, Roland covers by telling Angela to be wary of polite people in the Backstreets, as they are more likely to be lunatics. Angela is unconvinced by this categorization; Roland follows up by telling her that there is no point dividing people into groups, as all such groups will contain lunatics. Angela remains unconvinced by Roland's "load of bull."
Background
The Backstreets of District 23 are known for being the exception to the taboo of eating human flesh, and Pierre's Bistro takes this custom in stride. Outwardly, it is a simple restaurant known for its meat-based dishes and signature meat pies cooked by Pierre, established for 11 years. It is not famous but still has enough regular customers that Roland has personally heard of the establishment. Like many other restaurants of District 23's Backstreets, the Bistro's use of human flesh is an open secret. Even those not in the know don't feel the need to ask about the ingredients, because for most living in the street of flavor, the taste of the end product far outweighs whatever cooking processes were used to create it.[1]
Pierre started the Bistro in order to develop more stimulating tastes. She hopes to become worthy of joining the Eight Chefs in pursuing the ultimate flavor beyond the limits of the human tongue, like many other gourmets in the streets of flavor. To that ends, Pierre has experimented relentlessly with all sorts of ingredients (humans) cooked in all sorts of ways. She has even gone to the Outskirts to hunt monster meat for her culinary research.[2]
Pierre and Jack previously sourced their ingredients from two butcher Syndicates, the Musicians of Bremen and Little Piggy's. The former provided them with poor-quality bulk-quantity meat, which was still useful to them for making sausages and experimental dishes. Meanwhile, the latter provided expensive high-quality meat in small quantities, useful for special dishes and food readily made for consumption. However, both Syndicates recently stopped selling ingredients (the former due to the departure of its most talented members.) Because of this, Pierre and Jack have been forced to seek a new supply chain.[3][4]
